Just like in every aspect of the Peranakan life, the art of cooking is an articulation of the multifaceted cultural diversity.

While mainly Hokkien, many local ingredients such as daun pandan (pandan leaf), ketumbar (corrainder), asam (tamarind) and belachan (shrimp paste) is instituted into the recipes of the Peranakan culinary repertoire.

Below are a sample of possible Peranakan dishes. Base on the freshest ingredients available during different times of the year, most guests end up with the ‘chef’s’ recommended menu for the evening!

Simmered pork with black sauce and sugar. Served with dried beancurd

Chicken cooked in persevered bean paste with cinnamon bark

Braised chicken flavored with tumeric, galangal and lemongrass cooked with Indonesian black nuts

Deep fried whole seabass fillets cooked to a golden brown topped with Asian sauce

Pan fried halibut with sambal served with a homemade cinchalok

Prawn/Squid
Udang Kuah Pedas Nanas

Tiger prawns gently cooked in a tasty pineapple gravy

Udang Goreng Chilli Sambal
